Recipe 411 - Lemon Pomegranate Baked Pancake

We have this large bag of pomegranate that I have been using :) I was also wanting something quick for dinner on Beaver night and something that would fuel an evening run. Baked pancake fit all those criteria!

I could not find a recipe that used pomegranates, so I went with a basic pancake recipe and added the pomegranates and lemon juice/zest.

This was TASTY!!! I loved the little crunch of the pomegranates. The Princess is not that big a fan of that crunch sigh.. but she still had 2 pieces. The Dragon loved it and also had his 2 pieces! I had mine topped with a bit of Greek yogurt, some banana and then a sprinkle of a chia/hemp mix that I like.




Lemon Pomegranate Baked Pancake


  • 1/4 cup sugar
  • 1 grated lemon zest
  • 3 eggs
  • 1 juice from 1 lemon (the same one)
  • 2/3 cup all-purpose flour
  • 1/2 tsp pure vanilla extract
  • 1 1/2 tsp cinnamon
  • 1/8 tsp grated nutmeg
  • 1/8 tsp salt
  • 1/4 cups butter
  • 1 cup pomegranate arils
Preheat oven to 350. Place butter in pan and put in oven to melt the butter.
Mix all the dry ingredients together. In a separate bowl mix the wet ingredients (except butter which was in the pan). Combine the 2 mixes and pour into heated pan.
Place in the oven and cook for 15-20 minutes until cooked through. Cut and serve
