Recipe 339 - Pistachio Waffles

It was time for something a bit different for breakfast. A few months back we were watching one of those tv shows that visits restaurants and shows how they make their food, and they were showing a local restaurant called "John's Place". and how they made their waffles. The parts of the show i remember were the maple-cream cheese syrup (which I still have to make at one point), and the fact that they whipped the egg whites and then folded then into the batter to give lighter and fluffier waffles.

These turned out great, though cooking them was a bit of a chore. We used to have two waffle irons, but a while back i dropped one and it shattered. With only one iron to cook them, it took longer, but it was still doable..



Pistachio Waffles

  • 1 1/3 cups flour
  • 1/3 cup pistachios chopped
  • 4 teaspoons baking powder
  • 1/2 teaspoon salt
  • 2 teaspoons sugar
  • 3 eggs, separated
  • 1/3 cup oil
  • 1 1/4 cups milk
  • teaspoon vanilla extract
  1. Preheat the waffle iron.
  2. Separate the eggs. Beat the egg whites & vanilla extract until stiff peaks form. Set aside
  3. Mix together the flour, pistachios, baking powder, salt, sugar, egg yolks, oil and milk.
  4. When combined, fold in the egg whites (by hand).
  5. Ladle out batter onto the waffle iron and cook (my iron takes about 1/3 cup).
Makes 7-8 waffles.
