These turned out great, though cooking them was a bit of a chore. We used to have two waffle irons, but a while back i dropped one and it shattered. With only one iron to cook them, it took longer, but it was still doable..
Pistachio Waffles

- 1 1/3 cups flour
- 1/3 cup pistachios chopped
- 4 teaspoons baking powder
- 1/2 teaspoon salt
- 2 teaspoons sugar
- 3 eggs, separated
- 1/3 cup oil
- 1 1/4 cups milk
- teaspoon vanilla extract
- Preheat the waffle iron.
- Separate the eggs. Beat the egg whites & vanilla extract until stiff peaks form. Set aside
- Mix together the flour, pistachios, baking powder, salt, sugar, egg yolks, oil and milk.
- When combined, fold in the egg whites (by hand).
- Ladle out batter onto the waffle iron and cook (my iron takes about 1/3 cup).
Makes 7-8 waffles.
