Pumpkin things are starting to appear which made me wonder if there was a pumpkin pie bakes oatmeal. There was this one, which was close.
I made a few changes. First was to double the pumpkin, add chia seeds and extra vanilla. I also omitted the oil. Once I had it all mixed up it seemed a bit too dry so I added a bit more milk.
In the morning it was cooked, topped with fresh raspberries and greek yogurt - yum!!!! We all enjoyed this :) The Dragon was willing to try, he didn't love it but did at least take a couple of bites. It also reminded me how much I love baked oatmeal!!!!
Pumpkin Spice Baked Oatmeal

- 3 cups old fashioned rolled oats
- 1/2 cup brown sugar
- 2 tsp baking powder
- 2 Tbsp chia seeds
- 1/4 tsp salt
- 1 tsp cinnamon
- 1/4 tsp nutmeg
- 1/4 tsp cloves
- 1 tsp ground ginger
- 1 Tbsp vanilla
- 3 eggs
- 2 1/2 cups milk
- 1 cup pure pumpkin puree
1. Add all the dry ingredients. Combine the wet ingredients in a seperate bowl. Comnine them together and add to a greased 9x9 pan.
2. Leave overnight.
3. In morning out in 350F oven for 40-45 minutes.
4. Serve warm
