Recipe 341 - Pumpkin Spice Baked Oatmeal

There was a feeling of fall in the air today. It made me crave baked oatmeal (rather then regular oatmeal that we eat most mornings).

Pumpkin things are starting to appear which made me wonder if there was a pumpkin pie bakes oatmeal. There was this one, which was close.

I made a few changes. First was to double the pumpkin, add chia seeds and extra vanilla. I also omitted the oil. Once I had it all mixed up it seemed a bit too dry so I added a bit more milk.

In the morning it was cooked, topped with fresh raspberries and greek yogurt - yum!!!! We all enjoyed this :) The Dragon was willing to try, he didn't love it but did at least take a couple of bites. It also reminded me how much I love baked oatmeal!!!!
