Recipe 402 - Eggs with Beans and Spinach

This was a recipe that turned out SO good!!! I was wanting something high in protein with simple ingredients.

I had spinach, canned beans and eggs in the house (we are very low on basic supplies right now ;-p). So I sauteed the spinach and beans in some salsa. Once the spinach was wilted I cracked 4 eggs over the mixture, topped it with Epicure's pizza seasoning, covered with foil and baked for 15 or so minutes until the egg whites were set.

Oh MY!!! This was AMAZING. So simple but so full of taste. Dragon wouldn't try it because he doesn't like beans but the rest of us devoured this, not a speck left. We had it with some fresh bread on the side. We will be doing this one often around here :)



Eggs with Beans and Spinach


  • 1 19oz can of beans (I used white beans)
  • 180 grams spinach
  • 1 cup salsa
  • 4 eggs
  • 1-2 tsp Epicure pizza seasoning


Saute the beans, salsa and spinach until the spinach is wilted, 5-8 minutes. Carefully crack the eggs around the pan. Top with the Epicure seasoning.
Cover the pan with foil (not tightly) and cook in 350F oven for 10-15 minutes until egg whites are set.

Serves 4
