Recipe 407 - Potato Soup

We have been remaking many of our old favorites these days!

That said it was time to try something new again. I am not good at soup recipes because I usually just throw what we have in a pot and call it soup ;-) This time we decided to try an actual recipe and this potato soup looked perfect!

We were running low on groceries so I had to improvise. Basically I threw in the potatoes and then a bunch of frozen mixed veggies to bulk it up (carrots, broccoli and cauliflower). I left out the bacon being vegetarian. And I used Epicure Greek Seasoning. In the place of cream I used yogurt when I was pureeing it with the immersion blender. I served it with some Greek Yogurt and Feta cheese - YUM!

This was VERY tasty!!! A good solid potato soup with lots of taste and full of vegetables :) This was a hit all around for those of us that eat soup.




Potato Soup


  • 1 whole Medium Onion, Diced
  • 1 cup broccoli
  • 1 cup cauliflower 
  • 1 cup carrot, coarsely chopped
  • 6 small potatoes
  • 8 cups water
  • 1 cup yogurt
  • 2 bouillon cubes
  • 1 tsp Epicure greek seasoning
  • 10 Tbsp feta cheese


On medium-high heat,  place the onions, and vegetables in a pot. Stir and cook for 2 minutes or so, then add the diced potatoes. Cook for 5 minutes, then add seasoning spice.

Pour in the broth and bring it to a gentle boil. Cook for 10 minutes, or until the potatoes are starting to get tender.

Using an immersion blender puree the soup and add the yogurt. Let it heat back up and serve hot :)
