Roasted Sweet Potato and Goat Cheese on Mixed Greens

So we fell into a busy period and stopped experimenting :( There were lots of sandwiches in this time, and while there is nothing wrong with sandwiches, I truly missed all the wonderful foods we were creating.

So with that said it is time to get back to having fun with our food :)

Today for lunch we had a sweet potato/goat cheese salad on greens. Oh my!!! it was tasty! The roasted sweet potatoes and goat cheese go SO well together. I found this recipe and did a bit of tweaking. First thing was to cut the amount of dressing, I do not like my salads drowning so I lowered the amounts. I still ended up with enough dressing for 5 salads. I had no pumpkin seeds so I went with pinenuts :) And with no craisins in the house I just left those out. The final change was my spinach was a bit wilty so I went with baby kale and lettuce from the farm.

This was a hit! The Princess ended up having the rest of the potato/cheese mixture on it's own. The Dragon wouldn't try it because he doesn't like potatoes or goat cheese or kale sigh.. I will be making this one again for sure and next time I will add some fresh herbs to the dressing too.



Spinach Salad with Sweet Potatoes and Maple Vinaigrette

2 large sweet potatoes, sliced 1/4inch thick (I used 745grams worth)
1 Tbs olive oil

1 clove garlic, minced
1.5 Tbs Dijon mustard
1.5 Tbs apple cider vinegar
1 Tbs balsamic vinegar
1.5 Tbs maple syrup
2 Tbs olive oil

10 cup mixed greens
3 oz goat cheese
1 ounces pinenuts

1. Preheat the BBQ to medium.

2. Lightly brush the potatoes with oil and grill 7-10 minutes on each side, until the potato is lightly grilled and tender.

3. Combine the dressing ingredients (garlic to 2TB olive oil)

4. To assemble to salad, divide greens among four plates.  Top with sweet potato rounds, goat cheese, and pinenuts.  Drizzle with dressing a serve immediately.
