Goat Cheese, Basil and Strawberry Pannini

I am really loving goat cheese these days :) So I was looking for something different to try with it when I came across this recipe. I was intrigued, it was the sort of thing I would try in a restaurant but would never think of doing at home.

I had farm fresh strawberries, chard and basil from my garden and the goat cheese. I had ciabatta buns that I knew would be perfect too.

I added the chard because I LOVE chard. I didn't make the sauce this time either. With the pannini maker I have I also left out the butter to cut a few calories that way.

The Princess even wanted to try! And man did it turn out amazing!!! We were all really impressed by the amazing taste and the simplicity of it :) This will be a regular lunch option around here this summer!



Goat Cheese, Basil and Strawberry Pannini

  • 2 ounces Ciabatta bread
  • 1 ounce goat cheese 
  • 2 leaves chard 
  • 3-5 leaves of fresh basil 
  • 4-5 strawberries


Spread both sides of the bread with the goat cheese. On one side place basil and chard on top of the cheese. On the other side place the strawberries on top of the cheese.
Grill until lightly brown, Serve warm.

Serves 1
