Kale Egg Bake

I have a large bag of baby kale that I was looking for new things to do with. I came across this recipe and knew it would be perfect!

As always I made some changes :) First I didn't saute the kale because I hate extra steps like that. Instead I threw it in the baking dish and placed it in the oven while it was warming. I used a mix of eggs and egg whites because it was what I had. I also used a cheddar mix because I had no mozza. I then added a can of white kidney beans to up the protein.

This was tasty! I love egg/beans/green mixtures :) We made it into 8 servings because I was having it with a kale salad as well. No one really commented on the meal, which I take as good because there were no complaints ;-) The Dragon didn't have any because he won't eat beans.



Kale Egg Bake

  • 5 oz baby kale
  • 1 tsp olive oil
  • 1 1/2 cup cheese shredded
  • 3 eggs
  • 1 cup egg whites
  • 1 tsp Epicure seasoning
  • 540 ml kidney beans 


Preheat oven to 375F/190C.  Spray an 8 1/2 inch by 12 inch casserole dish with oil. Add kale to pan and place in oven for 2-3 minutes.

Top the kale with the cheese and beans.

Beat the eggs with seasoning. Pour over the egg mixture over the kale.

Bake about 30-35 minutes or until the mixture is completely set and starting to lightly brown.  Serve hot.
